Maple Mustard Vinaigrette
½ cup olive oil
1/3 cup maple syrup
2 Tbsp. cider vinegar
1 Tbsp. Dijon mustard
1 Tbsp. minced shallots or red onions (optional)
½ - 1 tsp. minced garlic (optional)
salt and pepper to taste
Combine everything in a blender or food processor and blend until emulsified.
