Dress it Up -- Recipe List

In case you missed the latest 5 Healthy Towns "Dress it Up" program with local chef Brad West, here are healthy salad dressings that were sampled at the event.

 

Maple Mustard Vinaigrette

½ cup olive oil

1/3 cup maple syrup

2 Tbsp. cider vinegar

1 Tbsp. Dijon mustard

1 Tbsp. minced shallots or red onions (optional)

½ - 1 tsp. minced garlic (optional)

salt and pepper to taste

 

Combine everything in a blender or food processor and blend until emulsified.

 

 

Blue Cheese Vinaigrette

½ cup olive oil

¼ cup white balsamic vinegar

½ - 1 tsp minced garlic

1 tsp. honey

2 tsp. Dijon mustard (optional)

salt and pepper to taste

1 cup crumbled blue cheese

 

Combine everything except blue cheese in blender and mix well until emulsified.

Stir in blue cheese.

 

 

Lower-fat Creamy Blue Cheese Dressing

½ cup lowfat buttermilk

½ cup lowfat sour cream (or lowfat Greek

½ cup lowfat sour cream (or lowfat Greek yogurt)

1/3 cup lite mayonnaise

1 - 2 tsp. white wine vinegar

1 - 2 tsp. lemon juice

1 tsp. sugar

1 tsp. minced garlic

1/8  – 1/4 tsp. hot sauce (optional)

¼ tsp. Worcestershire sauce

1 cup crumbled blue cheese

 

Combine all ingredients and mix well. Let flavors meld together for 1 day for best flavor.

 

 

Homemade Dry Ranch Mix

 (better than Hidden Valley)

¾ cup buttermilkpowder

¼ cup dried parsley

2 Tbsp. dried chives

1 Tbsp. dried dill

2 Tbsp. dried minced onion

1 Tbsp. granulated garlic

1 Tbsp. granulated onion

2 tsp. salt

2 tsp. fresh ground black pepper

 

 

Ranch Dressing

2 Tbsp. mix (more or less to taste)

½ cup lite mayonnaise

½ cup lite sour cream or lowfat Greek yogurt

½ cup 1% milk

 

Mix well and let flavors meld for 24 hours for best results.

 

 

Raspberry Vinaigrette

½ cup olive oil or canola oil or combination

¼ cup white balsamic vinegar

1/3 – ½ cup raspberry jam (seedless works best)

¾ tsp. granulated onion

½ tsp. granulated garlic

½ tsp. salt

¼ - ½ tsp. fresh ground black pepper

1 Tbsp. Dijon mustard (optional)

 

Combine in blender and blend until emulsified.

 

 

Greek Dressing

½ cup olive oil

3 Tbsp. red wine vinegar

3 Tbsp. fresh lemon juice

1 Tbsp. minced garlic

2 Tbsp. minced shallots or red onion

1 tsp. Dijon mustard

1 ½ tsp. oregano (dried)

¾ tsp. thyme (dried)

¾ tsp. salt

½ tsp. pepper

1 tsp. sugar

 

Combine in blender and blend until emulsified.

 

 

Super Strong Garlic and Mustard Vinaigrette

½ cup olive oil

3 Tbsp. red wine vinegar

3 Tbsp. lemon juice

2 -3 Tbsp. minced garlic

3 Tbsp. Dijon mustard

¾ tsp. salt (to taste)

¾ tsp. fresh ground black pepper (to taste)

 

Combine in blender and blend until emulsified.
